JAI RADHA MADHAV
VANCOUVER & LOWER MAINLAND
The Savoury Companion
Crisp Outside. Tender Within. ✨
Straight from the bustling lanes of Ahmedabad comes our Dalwada — golden moong-dal fritters with a shattering crisp crust and a soft, spiced heart. A beloved monsoon-evening classic of Gujarat, made the honest way: slow-fermented dal, hand-ground spices, and hot small-batch frying. Where our jalebi is liquid gold and sweet, the Dalwada is its fiery, savoury twin — together they make the complete Gujarati celebration.

"Served hot, straight from the kadhai — the way Ahmedabad does."

The City Behind The Bite
Ahmedabad, Gujarat's largest city, is a living blend of old and new — a UNESCO World Heritage City whose 600-year-old pols and carved wooden havelis stand beside India's boldest street-food lanes. Founded by Sultan Ahmad Shah in 1411, it grew into the cloth capital of India, earning the affectionate name "Manchester of the East" — a city of makers, merchants and mahatma: it was from Ahmedabad's Sabarmati Ashram that Gandhi led India's freedom movement.
But ask any Ahmedabadi what the city is truly famous for, and they will tell you: the food. From Manek Chowk's midnight stalls to monsoon evenings under drizzling clouds, this is a city that eats with passion — and Dalwada is its proud signature, best enjoyed hot on a rainy day. We bring that exact same spirit — the ferment, the fire, the fearless spice — from Ahmedabad's lanes to your table in Vancouver.
✦ From the lanes of Manek Chowk to Vancouver — same batter, same fire, same soul.
Ahmedabad Standard
Our Dalwada is held to the same gold standard as our jalebi — street-food soul, delivered with boutique care, never a soggy compromise.
The Artisan Story

The Crunch
Each jalebi is fried to a precise amber—a shell of caramelised sugar so thin it fractures like glass at the first bite, releasing a flood of warm, saffron-kissed syrup.

The Flow
Our syrup is laced with kesar—hand-picked saffron threads that transform raw sugar into a jewelled nectar, migrating deep into every whorl and spiral of the batter.

The Heat
We cook in a traditional iron kadhai, just as our ancestors did. The high heat creates the Maillard alchemy that no modern fryer can replicate—a depth of flavour earned through flame.
The Craft
The Taste of Liquid Gold ✨
There's something magical about a perfectly made Jalebi — thin spirals, deep golden shine, and that irresistible crispy crackle when you take the first bite. A truly premium jalebi should feel like edible gold: rich in colour, luxurious in texture, and unforgettable in taste.

"Not just a sweet — a golden celebration of crunch."
The Four Sacred Rites of Creation — Each a Closely Guarded Secret
